Unexpected things from unexpected places. I got the following recipe from one of my mother’s friend’s daughters today. It apparently was Grandma Brown’s recipe. Mom has spoken of her mother’s bread before but never about rolls. I don’t think mom herself ever made anything with yeast although who knows what she did before I was born? I guess there are a lot of things I did when I was younger that I don’t have the time and patience for now.
Jiffy Rolls – Gramma Brown’s recipe
2 pkgs dry yeast
1/2 cup luke warm water
2 tsp sugar
1/3 cup melted fat
1 & 1/2 tsp salt
1/2 cup scalded milk
1/4 cup molasses
1 slightly beaten egg
3 cups whole wheat flour
Dissolve sugar in the warm water, add yeast and let sit for 15 minutes. Combine scalded milk, fat, molasses, salt, and let cool to lukewarm. Add beaten egg and dissolved yeast to milk mixture. Add flour and mix well. Roll out on floured board. Cut in rounds or squares, Brush with melted fat. Let rise in warm place until doubled in size. Bake in 425 oven for 20 minutes.
